ETHYLENE BIOSYNTHESIS OF QUINCE DURING STORAGE

Abstract:
Together with some fruit characteristics, changes in internal ethylene concentration, ethylene production, 1-aminocyclopropane-1-carboxylic acid oxidase (ACC-O) activity, respiration rate, were investigated in 'Cukurgobek' and 'Esme' quince cultivars during cold storage and shelf life periods. Internal ethylene concentration, ethylene production and ACC-oxidase activity ranged between 0.0-19.3 μl.l-1, 0.001-0.233 nmol.kg-1.s-1, 0.3-3.4 μl.l-1 for the complete research period, respectively . However, a sharp increase in these parameters could not be observed during storage and they had fluctuations during ripening periods. Although flesh firmness, fruit color and organic acid content tended to moderately decrease in both cultivars, only increases in fructose content were observed.
