Abstract:
Fruit growth, ripening and oil composition were studied in ‘Carolea’ olive in three sites of southern Italy with different water availability. Summer drought greatly reduced fruit growth, yield, and oil accumulation but it enhanced pre-harvest fruit drop and shortened fruit ripening time. Site changed fruit ripening pattern and commercial harvest time but did not affect oil composition as well. Oil composition changed in relation to the fruit ripening rate pattern. The interaction between site and harvest time was significant, and a rapid depletion of oil quality occurred at the driest site.
