CHLOROGENIC ACID CONTENT VARIATION IN ARTICHOKE PLANT PARTS AND PHYSIOLOGICAL STAGES

Abstract:
Artichoke is one of the most important vegetable crop species cultivated in the Mediterranean area, appreciated for its organoleptic characteristics. In recent years, the interest has increased also for the nutraceutical compounds found both in the head and in the whole plant. Most of these beneficial compounds belong to the class of polyphenols. These are organic antioxidant molecules widely present in vegetables, useful for the prevention of lipo-protein oxidation, for their potential effect as free-radical scavengers, and, as recently demonstrated, for their positive action in cardiovascular diseases associated with aging and in contrasting tumor growth.
In the present contribution, we report on the results of an evaluation of chlorogenic acid content in different plant parts (heads and leaves), and at various physiological stages of some artichoke accessions from different origins, grown in the field of the Institute of Plant Genetics (IGV-CNR) using high pressure liquid chromatography technique (HPLC). Plant parts were collected over two years and were immediately frozen at -20°C. Polyphenol extraction was performed twice.
Results showed a different amount of chlorogenic acids among the accessions, and in the leaves compared to the heads. In the heads, chlorogenic acids increase from external to internal bracts.
