Abstract:
In plant cells phosphoenolpyruvate carboxykinase (PEPCK) is only present in the cytosol in which it catalyses the reversible reaction: oxaloacetate + ATP = phosphoenolpyruvate + ADP + CO2. PEPCK is present in some fruits, however, its occurrence in most, and its function in all, is uncertain.
In this study the occurrence of PEPCK in the flesh of grapes (Vitis vinifera L.), at different stages of their development, was evaluated.
Small amounts of PEPCK were present before the onset of ripening, and during ripening its abundance greatly increased.
The content of malate increased until ripening and then declined.
This is consistent with PEPCK playing a role in the net dissimilation of malate during the ripening of grape.
