Abstract:
The major anthocyanins and anthocyanin-derived pigments of Primitivo red wine were investigated using High Performance Liquid Chromatography (HPLC) coupled to Electrospray Ionization Tandem Mass Spectrometry (ESI-MS/MS) without any previous separation and/or concentration step.
Many compounds were detected, most of them were identified and easily recognized from their fragmentation patterns and by means of literature data.
