BIOCHEMICAL COMPOSITION OF FRUITS OF SOME IMPORTANT WALNUT CULTIVARS AND SELECTIONS

Abstract:
The paper presents the results obtained in the study on biochemical composition of kernel (starch, sugars, proteins, oil, iodine number and refraction index) in the following eight cultivars and selections: Dorka, Ceinovo, Ibar, Vujan, Ovcar, G-139, G-251 and G-286. The average starch content in the cultivars studied amounted to 2.46%, Sugar content averaged 2.93%. It was found that the average value for proteins was 14.02%. Oils, which had the greatest content in kernel, averaged 68.81%. Iodine number, as an indicator of oil quality was 140.81 on average, whereas the average value for refraction index was 74.72 for all the cultivars studied.
