Abstract:
Cucumber is one of the most faverable vegetables to Chinese people. The history of cucumber cultivation in China has been more than 2 000 years. Due to the different comsumption habits and usage, every district in China has its own faverable choice in fruit color, quality, shape and maturity. Nowadays, cucumber in China is mainly used for cooking, soup and salad. In addition, it also can be eaten freshly. Another important usage of it is for processing. With the change in living style and the development of foreign trade, the production of cucumber for processing will be increased remarkably.
