Changes of chemical composition of rhubarb during vegetation

Abstract:
The aim of present research was to investigate changes of chemical composition of three rhubarb cultivars of domestic garden rhubarb (Rheum spp.) NDASH 'Victoria', 'Ogre', 'Tukums' grown in open field area during vegetation. Several petiole vegetative growth parameters were determined during vegetation from April till August. The content of total oxalate, soluble oxalate, vitamin C was determined titrimetrically, content of anthocyanins, polyphenols, flavonoids, antiradical activity NDASH spectrophotometrically, the dry matter NDASH gravimetrically. It was clarified that content of oxalate in petioles increased during all of the vegetation time of rhubarb. The most rapid increase was observed from May till June, it depended on the cultivar and could reach 1.3 g 100 g-1. The content of vitamin C in rhubarb petioles increased till June and could amount from 45.5 till 68.8 mg 100 g-1 depending on cultivar. 'Tukums' had the highest average content of phenolics (112.19±8.91 mg gallic acid 100 g-1 FW), flavonoids (7.36±0.28 mg catechin 100 g-1 FW) and antioxidant activity (11.95±0.02 mM Trolox ekv 100 g-1 FW) comparing with cultivars 'Ogre' and 'Victoria'.
