Abstract:
The objective of this study is to evaluate the antioxidant activities of total phenolic (TP) in four solvent extracts from jujube. The TP contents are measured using a Folin-Ciocalteu assay. The antioxidant activities of various jujube extracts in aqueous methanol, ethanol, acetone and water are measured by ferric reducing power, metal chelating capacity, DPPH (1,1-diphenyl-2-picrylhydrazyl) and hydroxyl radical (ĽOH) scavenging capacities. The methanolic extract of jujube shows the highest TP contents and the greatest antioxidant activity. Aqueous methanol is the recommended solvent to prepare antioxidant extracts with acceptable yields of phenolic compounds from jujube. This study has also verified that the methanolic extract has high antioxidant activity and can be used as a source of potential antioxidants. To utilize this significant source of natural antioxidants, the characteristics of the phenolic composition should be studied further.
