ON THE CONTENTS OF PROTEIN AND ITS COMPOSITION OF AMINO ACIDS IN LEAVES OF SOME MEDICINAL AND SPICE PLANTS,EDIBLE AS GREENS

Abstract:
Leaves of 16 edible wild plant species, suitable as food for free and some of them used as medicinal or spice plants have been collected in the open. The contents of leaf protein were estimated by the Kjeldahl method, and the isolated proteins were analyzed with regard to their composition of amino acids by an autoanalyzer. With respect to the quantity and quality of the leaf proteins considerable differences result within the 16 species among which are Achillea millefolia, Cardamine amara, Glechoma hederacea, Lamium album, Malva neglecta, Malva sylvestris, Rumex acetosa and Taraxacum officinale. As to the suitability of the leaves as protein nourishment three species of Malva, two of Chenopodium and Lamium album jut out remarkably, because their contents of protein as well as the biological value of their proteins range relatively high. The limiting amino acids of these proteins belong mostly to the sulfur containing ones. The leaves of the mentioned species appear to be of much higher nutritive value and flavour than those of the compared common garden lettuce (Lactuca sativa) and are probably of good supplementary effect to the protein of cereal foodstuffs.
