QUALITY OF RED BEET (BETA VULGARIS L.) AS AFFECTED BY STORAGE CONDITIONS

Abstract:
Humidity is a more important factor for storage of beet root than temperature, and is mostly responsible for the maintaining of quality of stored fruits. Long term storage is only possible when the relative humidity is greater than 95 %. Storage temperature has little effect on beet root respiration: there was little difference between beet stored at 1°C or 4 to 9°C. Three to five percent CO2 in the storage atmosphere is without any influence of the quality of the stored beets.
