Nitrate accumulation in vegetables is of concern because of the potential postharvest conversion to nitrite.
Nitrite and other possible conversion products have been cited as possible hazards to human health.
Nitrate accumulates in plants when uptake exceeds reduction.
Transport and translocation of nitrate may further influence the nitrate concentration of a particular plant organ.
Accumulation is genetically controlled and is modified by environment, fertilizer management, and crop production practices.
Effective means of minimizing the accumulation of nitrates in vegetables include identification of low nitrate accumulating genotypes, manipulation of fertilizer regimes, exploiting natural diurnal fluctuations in nitrate concentration, and use of nitrification inhibitors.
Appropriate preparation for culinary use will further lower ingestion of nitrate.
