TECHNOLOGICAL CHARACTERISTICS OF SOME APPLE CULTIVARS

Abstract:
This study presents the chemical composition of the apple varieties ‘Golden Delicious’, ‘Boskop’, ‘Granny Smith’, ‘Fuji Kiku 8’ and ‘Pink Lady’ from the Republic of Macedonia. In fruits of those apple varieties the contents of moisture and dry matter, the contents of minerals expressed as ash, acid content, vitamin C, pectin and the content of sugars are determined. The highest content of soluble in water dry matter and total dry matter (20.0% and 22.67%), ash and total acidity (5.49% d.m. and 3.0% d.m., respectively) and 16.42% sugars in the ‘Boskop’ apple variety is determined. In ‘Fuji Kiku 8 the pectins concentration is 5.6% d.m.
