DEVELOPMENT OF TOMATO SEED OIL BASED TOMATO PRODUCTS

Abstract:
The paper shows the possibility of using tomato seed oil as a covering juice for many tomato based products, including sauces and sun dried products. The seeds taken directly from the finisher and the oil extracted using a traditional seeds oil extractor showed promising processing yield. Tomato seed oil was used in the past as an alternative or mixed with other seed oils (sunflower) however its production was abandoned due to its early oxidation characteristics followed by off taste formation. The latter problem can be solved by preserving the oil with nitrogen. Tomato seed oil contains lycopene and carotene as well as many other nutritional elements in the same amount as other commercial oils. Finally, the paper reports that the quality of the shelf life of these tomato products can be determined by a survival analysis. The survival function is defined as the probability of a consumer accepting a product stored beyond time t. The hazard would not be focused on the product’s deteriorating, but rather on the consumer rejecting the product.
