Abstract:
Cultivation and processing of tomato is one of the main agricultural businesses in the Mediterranean countries.
Production of tomato paste leads to the generation of millions of tons of solid processing residues.
Tomato pomace is still a rich source of bioactive compounds such as high-valuable oils, dietary fibre, vitamins and secondary plant metabolites.
Tomato bioactive compounds are not only interesting food additives i.e. colorants and antioxidants but also nutraceuticals and cosmetic ingredients.
The extraction and purification of these natural components from very cheap and reliable raw materials can pose an alternative prospect for a profitable utilisation of processing residues and can enhance the allocation of natural ingredients on the European market.
