Abstract:
Pomegranate fruits are rich in anthocyanins, pigments responsible for external and seed color development of which the latter is a crucial quality attribute for consumer acceptance.
The goal of this study was to evaluate pomegranate jam anthocyanin content and color development over time.
Different temperatures and light regimes were tested during storage.
Optimal storage conditions were achieved at 5°C and no light exposure at all.
