MARRONE DEL MUGELLO PGI: NUTRITIONAL AND ORGANOLEPTIC QUALITY OF EUROPEAN CHESTNUT (CASTANEA SATIVA MILL.) FLOUR

Abstract:
‘Marrone del Mugello PGI’ (PGI = Protected Geographical Indication) is a quality trademark recognized by the European Community for fruits (fresh, dried or milled as flour) obtained from European Chestnuts (Castanea sativa Mill.) in the Mugello area (Tuscany – Italy). The Laboratory of the Chamber of Commerce of Florence, in collaboration with the Department of Horticulture (University of Florence), is carrying out a project to evaluate the nutritional and organoleptic qualities of ‘Marrone del Mugello PGI’ flour. Macronutrients, microelements, vitamines and antioxidants have been chemically analysed to highlight the nutritional qualities of the flour. Marrone del Mugello PGI chestnut flour has shown very high and special quality, not only from a chemical and nutritional, but also from an organoleptic point of view.
