Abstract:
On their way from the producer to the consumer perishable horticultural produce frequently lose much water as the result of unfavourable environmental con¬ditions. An effective control of the mass transfer under practical conditions is almost impossible due to the large number of influencing parameters and the complex flow conditions against and around the produce respectively the packaging units. In the present study newly developed, simple evaporation devices are introduced. An account of constructive details and methodical aspects of the development and the application is given. An application for the determination of local air velocities on a motor truck during transport of apples is presented as an example.
