Abstract:
This paper deals with commercial wine making under tropical conditions.
It is not only the heat of 25–35°C during the harvesting and fermentation period that makes this a special challenge but also the general conditions of grapes grown under tropical conditions without a dormant period of vines and permanent short day conditions.
These factors result in an irregular sprouting and consequently irregular ripening of bunches and with some cultivars even extreme irregular ripening of berries within one bunch.
