NUTRIENT COMPOSITION OF ALLIUM MONGOLICUM REGEL SEEDS COLLECTED FROM INNER MONGOLIA, CHINA

Abstract:
In this study, the nutrient composition of Allium mongolicum Regel seeds collected from Inner Mongolia China was determined in various laboratory assays. Results showed that these seeds were rich in crude fat, starch, vitamin C, and various amino acids, among which the content of glutamic acid was the highest. The content of essential amino acids was 28.3% of the total content of amino acids. The score of ratio coefficient of amino acid (SRC) was 38.37 and the first limiting amino acid was leucine. Among the total fatty acid content, the proportions of unsaturated fatty acids (UFA), the essential fatty acids, and the linolic acid were 92.45%, 74.92%, and 74.57%, respectively. The ratio of polyunsaturated fatty acids (PUFA) to saturated fatty acid (SFA) was 11.78.
