Abstract:
Changes of dietary fiber (DF), its components, and their response to different fertilizers were investigated in Zizania latifolia Turcz. galls during swelling. Results showed that total dietary fiber (TDF) content in the edible parts of Zizania galls was high and mainly consisted of insoluble dietary fiber (IDF). Cellulose and hemi-cellulose are in higher proportion than lignin and pectin in DF. When organic manure was used, the content of soluble dietary fiber (SDF) increased while that of TDF changed as a function of gall length in the edible part of the gall. It is suggested that the Zizania gall is a type of high quality DF food, and its fiber quality can be improved by using organic manure.
