EFFECT OF POTASSIUM ON FLAVOR QUALITY AND LOX ACTIVITY OF CUCUMBER IN SOLAR-GREENHOUSE

Abstract:
The effects of potassium fertilizing were studied on volatile aromatic compounds, nonvolatile taste compounds and lipoxygenase (LOX) activity of cucumber in solar-greenhouse with Chinese cultivar ‘Jinyou No.1’, one of the major cultivars in the north of China, were investigated. Potassium fertilizer varied from 0 (K0), 300 (K300), 600 (K600), 900 (K900) and 1200 (K1200) kg/hm2. The results showed that the content of 2E,6Z-Nonadienal increased from K300 to K600, K900, K1200 and that the 2,6-Nonadienol content increased from K0 to K300. The LOX activity enhanced gradually as potassium supply increased. There was a positive correlation between LOX activity and the peak area of volatile aromatic compounds. The organic acid and the tannin contents reduced significantly as K2O supply increased from 0 to 600 or 900 kg/hm2 respectively. So we suggested that 600~900 kg/hm2 K2O was required for better flavor quality under this experimental fertility.
