Abstract:
The investigation of the anthocyanic profile of different red grape varieties grown in Sicily was conducted.
A HPLC-DAD instrument equipped by a column ODS 3, 150 mm, 4.6 mm, was used for separation and identification of the anthocyanins.
The mobile phase was constituted by a gradient of water/metanoic acid (90/10) and methanol/metanoic acid (90/10). In ‘Nerello Mascalese’ and ‘Corinto Nero’ grape skin malvidin-3-glucoside and cyanidin-3-glucoside were present in similar percentage. ‘Nerello Cappuccio’ shows a higher concentration of anthocyanins respect to ‘Nerello Mascalese’ and malvidin-3-glucoside was the main anthocyanin.
