SWEET POTATO IN INDIAN CUSINE: USE OF VARIETIES WITH THE LEAST SWEETNESS

Abstract:
An experiment was conducted at the Department of Vegetable Crops, Horticultural College and Research Institute, Coimbatore of Tamil Nadu Agricultural University to screen sweet potato clones for low sugar content as substitute for potato. The results of the experiment reveal that the sweet potato clones IGSP-9 and BCSP7 can be selected as genotypes with high tuber yields of 50-53 t/ha with high starch content of 33-34% and least total sugar content of 1.3-1.5%. These two sweet potato clones after organoleptic evaluation are recommended as the substitutes for potato.
