ANALYSIS OF THE ANTHOCYANIN PIGMENT CONTENT IN THE PLUM CULTIVARS WITH THE DIFFERENT TIME OF MATURITY

Abstract:
Great colour diversity of the fruits appears as a result of the anthocyanin pigment content in the cell sap.

Anthocyanin pigments belong to the group of matter which, in addition to the others, have a high biological value.

According to their importance and to, the fact that only a few researches have been done in that field concerning plums, the objective of our investigation was to obtain some informations on their presence in the fruit skin.

Fruit of two prune cultivars were investigated : Ruth Gerstatter as the erliest matirating cultivar and Prunus domestica L. cv. Pozegaca as a member of the group of late maturating ones. These two prune cultivars manifest some differences, as well as some identical biological properties. There is a significant diversity in the anthocyanins content.
