Abstract:
The cardoon is a highly important crop in Navarre’s food and agriculture industry and its expansion is associated with the increase the industry has seen in the activity. In Navarre, the main variety grown is the native ‘Verde de Peralta’, destined for both the fresh market and industry. This variety is characterised by the compactness and low fibre content of its leafs. In this paper we analyse the agronomic behaviour and the suitability for industrial processing of the following cardoon varieties: Blanco de Peralta, Lleno de España, Lumbier, Tafalla, Blanco de Valencia, Verde de Calahorra, Verde de Peralta, Rojo de Agreda and Rojo de Corella. The Verde de Calahorra and the Verde de Peralta were the most productive varieties and also had the highest industrial yield. Nevertheless, it was the white varieties that stood out in the sphere of premium quality leaf production with rates exceeding 30%. The least productive variety was the Rojo de Agreda. The differences in yield between varieties are due mainly to the variability in the average unit weight, with the lowest reported by the Rojo de Agreda and the highest by the Verde de Calahorra.
