Abstract:
An experiment was conducted to utilize apple fruits grown at lower elevations and valley areas of Himachal Pradesh for the preparation of convenience products.
Such fruits are not suitable for table purposes and either go waste or fetch very low market price due to their poor quality.
Among the nine cultivars tried for the development of dehydrated ready-to-serve (RTS) chutney and pickle, the cultivar Cox’s Orange Pippin and Red Baron were adjusted as best on the basis of physico-chemical and sensory evaluation.
The cost of production for RTs chutney and pickle worked out to be Rs. 65.10 and Rs. 46.26 per kg, respectively.
The developed products can commercially be explored at industry level for efficient and profitable utilization of fruits grown at lower elevations and valley areas of Himachal Pradesh, Jammu and Kasmir and Uttaranchal to ensure better returns to growers.
