Abstract:
Many orchards of the pear variety Passe-Crassane from Loire valley and from the South-west of France were tested.
The refractive index of the juice was analysed at the picking-date and it was found a fairly good correlation between this index and the quality of the flesh.
Some cultural practices can increase the total sugar in the fruit and finally the quality.
