RESULTS AND PROSPECTS OF "CONFERENCE" PEARS IN CONTROLLED ATMOSPHERE STORAGE

Abstract:
"Conference" pears behavior at different levels of CO2 and O2 and in normal cold store has been studied. The increase of CO2 to 3%, 5%, 7% gave progressive advantage to flesh firmness, but increased at the same time and in the same way brown core incidence. Damage reduction due to rise of O2 levels from 3% to 8%–12%–16% was very evident only when 5% CO2 and 8% O2 concentrations were used.

The optimum date of harvest was very important: early picking controlled brown core incidence also in high CO2 level (7%).

Large-sized pears were much more injured than smaller ones.
