MODELLING THE INACTIVATION BY PEF OF LACTOBACILLUS PLANTARUM IN AN ORANGE JUICE-MILK BEVERAGE

Abstract:
This work studies the inactivation kinetics of Lactobacillus plantarum in an orange juice-milk beverage by pulsed electric fields. The maximum inactivation reached was 2.1 log cycles applying 40 kV/cm, 130 µs, 2.5 µs and T 55°C. The Weibull distribution function best fitted the experimental data giving Accuracy factor (Af) values closer to 1 and Mean Square Error (MSE) values closer to 0. The Hülsheger model gives a good fit but the parameters do not show any biological sense. The inactivation reached in the beverage is lower compared with other works, this is probably due to the complex composition of the product.
