Abstract:
Gas diffusion properties of the pear tissue are important related to the gas transport during storage of the fruit.
In this contribution, a measurement set up for tissue diffusivities using optical probes was developed.
O2 and CO2 diffusivities were determined simultaneously based on a finite element model describing simultaneous O2 and CO2 gas transport as well as respiration in the tissue.
An investigation of the effect of variations on the diffusion set-up conditions such as the volume of the measurement chamber and thickness of the sample on the variation of estimated diffusivities was carried out using sensitivity analysis on the simulated data.
The coefficient of variation of diffusivity of O2 and CO2 in pear tissue due to bias and variation of the sample thickness and volume of the measurement chamber were 2-2.3% and 2.15-2.4% in the domain of 7.5 to 15ml of measurement chamber volume and 1-2.5mm of tissue thickness.
The variability due to the measurement errors was 8 times lower than the biological variability.
O2 diffusivity was not influenced by temperature while temperature had a statistical significant effect on CO2 diffusivity although small compared to its biological variability.
