Abstract:
Various antioxidant and anti tumor activities and anti obesity effect have been attributed to Conjugated Linoleic Acid (CLA) or its downstream metabolites.
The purpose of this study was to screen these compounds in two variety of Iranian garlic [Allium sativum, var. sativum (I) &Allium ampeloprasum, var .holmens (II)] that are cultivated in north Iran.
In this work H-NMR, IR, GC and GC-Mass have been used in the characterization of Unsaturated Fatty Acid Methyl Ester (UFAME s). The qualitative and quantitative analysis of garlic extract had significant amount of 9,12-octadecadienoic acid methyl ester and 11,14-eicosadienoic acid methyl ester for var. holmens (II). The antioxidant and anti tumor activities of CLA and its isomers in this variety of garlic may have a protective action on human health and a cheap source of large amount of natural anti oxidant
