Abstract:
A method is discussed for obtaining a representative sample which characterized the ripening behavior of tomato fruit continually during commercial operation regardless of conditions.
A sample of one fruit from every 10th box during initial packing reflected the ripening behavior of the total lot.
This nondestructive technique would enable the commercial buyer, repacker, and distributor to visually check the ripening development of the total lot at any time during marketing.
Optical density measurement could accurately determine maturity but could not be used for the precise prediction of ripening behavior because of deliberate changes in holding temperature under commercial conditions.
Visual inspection and instrumental measurements for assessing tomato maturity were also compared.
