RIPENING BEHAVIOR OF THE RIN TOMATO MUTANT

Abstract:
The rin tomato is a mutant which produces fruits that can be considered non-climacteric. There is little or no change in ethylene or CO2 production of rin fruits monitored for up to 120 days after harvest. Exogenous ethylene or propylene treatments do not stimulate ethylene production but do stimulate CO2 production. The CO2 stimulation persists only in the presence of the exogenous olefins. Stimulation of CO2 production can be repeated several times in the same fruit. Wounding stress stimulates both ethylene and CO2 production in rin fruits.

Rin tomato fruits normally do not produce lycopene when they eventually turn to a lemon yellow color. Lycopene synthesis can be caused by treatment of rin fruits with CPTA plus C3H6 or CPTA alone. Lycopene synthesis in rin fruit can occur without an increase in ethylene or CO2 production depending upon the treatment given the fruits.
