CONCENTRATION OF ALPHA-AMYLASE IN HAND AND MECHANICAL HARVESTED RED CABBAGE

Abstract:
In heads of red cabbage the concentration of alpha-amylase decreased in both hand harvested and mechanical harvested heads during the period of storage. The concentration decreased more rapidly in mechanical harvested than in hand harvested heads during the last period of storage.
