Abstract:
As large amounts of tomatoes are transported by refrigerated motortruck, some investigations were made in order to see how much tomato color was influenced by temperature level and its distribution inside refrigerated van.
Studies were performed on air circulation inside refrigerated van, on how long it takes to cool the produce from the initial temperature to transit temperature, and also, on changes in the pulp temperature of tomatoes placed in different parts of refrigerated van.
It was found that tomatoes responded very readily to the temperature differences inside refrigerated van, and in consequence, their color change was very different during transit.
