STORAGE CONDITIONS FOR CHINESE WATER CHESTNUTS, ELEOCHARIS DULCIS (BURM F.) TRIN.

Abstract:
It was found that Chinese water chestnuts, Eleocharis dulcis (Burm. f.) Trin., can be stored at 0° to 5° C for eight months submerged in a solution of 1000 ppm sodium hypochlorite with a minimum of sprouting, mold, weight change, or change in flavor and texture. This storage method was far superior to storage under the standard method of moist sphagnum moss or moist milled pine bark, potassium sorbate dip, hot water treatment, waxing, high nitrogen atmosphere, or 4 mil polyethylene bags. It was also found that water chestnut corms stored for eight months in a sodium hypochlorite solution could be successfully peeled by the standard method. After eight months of storage in the solution, these corms showed a 20% germination ability under favorable germination conditions.
