Abstract:
FOREWORD
This volume represents presentations made in the Potato Symposium entitled “Potatoes: Healthy Food for Humanity.
International Developments in Breeding, Production, Protection and Utilization” at the joint meeting of the Potato Association of America (PAA) and the International Horticultural Congress held in Toronto, Ontario, Canada, 11-17 August 2002. This joint meeting afforded attendees the opportunity to learn about the current status and emerging research topics as related to potatoes but also in the larger context of horticultural commodities.
It was hoped that common issues and potential research collaborations from within and among the various commodities would be forged, and in some cases fruitful discussions and research collaborations occurred.
The idea of cross fertilization became a reality.
Presentations in the Potato Symposium were made in four general areas: breeding, production, protection and utilization, after which presenters, both oral and poster, were invited to submit their presentations for possible inclusion in this volume.
All submitted presentations were peer reviewed by the Scientific Committee.
The putting together of proceedings from a conference is rarely the efforts of a single person and this was the case for this volume.
I would first and foremost like to thank my colleague, Ms.
Leslie Copp, for her tireless efforts and dedication throughout the entire process.
Leslie made this volume happen.
I am also glad that this volume is finished for a purely selfish reason - Leslie will stop bugging me!
In conclusion, I would like to thank a number of groups/individuals.
First of all, thank you to the Executive of the Potato Association of America for breaking from their tradition of holding a separate annual meeting and being supportive of a joint meeting.

Keynote speakers and authors of selected contributed oral and poster presentations were given the opportunity to submit a manuscript for publication.
These manuscripts were reviewed by the symposium editor and other referees.
Only those papers judged suitable for publication following the authors consideration of reviewer suggestions appear in this volume of Acta Horticulturae.
