Abstract:
FOREWORD
This volume of Acta Horticulturae is the Proceedings of the 8th International Symposium on the Processing Tomato, which was organized in Istanbul, Turkey, 8-12 June 2002 in same place and time that the 5th Worldwide Congress on the Processing Tomato.
The huge economic importance of the cultivation and processing tomato in this area guides in the choice of Istanbul in Turkey as the place of both Congress and Symposium.
The Aims of the Symposium are :
- to present recent research results regarding sustainable production, cultivation and quality of tomatoes grown for processing, and processing technology;
- to provide an opportunity for the exchange of information between horticulturists, agronomists, plant pathologists, entomologists, agricultural engineers, biotechnologists, extension specialists, food technologists and managers of private and cooperative processing industries;
- in close cooperation with the Congress program, special attention will be given to economic, technological and nutritional aspects.
The following five main topics was covered in 7 lectures, 23 oral and 50 poster presentations by scientists from 21 countries during the following 5 sessions:
Session 1 Physiology and molecular biology of the Tomato, Tomato Quality
Session 2 Crop management, irrigation and fertilization, weed control, harvest
First Part: Irrigation, Ferti-irrigation, Fertilization, Crop installation
Second part: Weeding, Sustainable cropping, Harvest and post-harvest, Economics
Session 3 Control of diseases and pests, Integrated Pest Management
Session 4 Genetics and breeding of processing Tomato, resistances, biotechnology
Session 5 Tomato Products, including Processing Technology, Residual and Environmental aspects, Food Safety, and Human and Health aspects.
First part: Effects of the processing on the antioxidant content of tomato products
Second part: Processes and their influence on quality of Tomato Products
Third part: Regional Situations of the Processing Tomato
Invited and keynote speakers and authors of posters had the opportunity to submit their manuscripts for publication in this volume of Acta Horticulturae .
Submitted manuscripts were reviewed by the Editorial Board.
The Editor give a special acknowledge to the Editorial Board for their strong support and very efficient cooperation which was a significant contribution to the overall quality of this publication.
The success of this Symposium was due to the effort of the entire staffs of AMITOM (Mediterranean Association of the Processing Tomato) and SIID (Turkish Association of Tomato Processors), to Fiere di Parma the professional organizer of the events, to the sponsors, to the members of the Scientific committee, to the invited speakers, to the valuable Chairpersons of session and members of the Editorial Board, and above all to the indefatigable Secretary Xavier Branthôme.

PREFACE
The papers contained in this volume of Acta Horticulturae form the proceedings of the Eighth International Symposium on the Processing Tomato.
Keynote speakers and authors of selected contributed oral and poster presentations were given the opportunity to submit a manuscript for publication.
These manuscripts were reviewed by the symposium editors and members of the Editorial Committee.
Only those papers judged suitable for publication following the authors consideration of reviewer suggestions appear in this volume of Acta Horticulturae.
The ISHS acknowledges and appreciates the contribution of all editors and reviewers.
