Abstract:
Kiwifruit originated near the Yangzi River in China. Kiwifruit production has continued to increase in recent years in China. Many studies have been conducted in China on postharvest physiology and technology of kiwifruit. The paper reviews the progress of research on postharvest quality and physiology of kiwifruit in China, including changes in respiration, ethylene production, enzymes activity, and starch hydrolysis). The mechanism involved in softening of the fruit is discussed in detail.
