Abstract:
This paper discusses some the current aspects of vegetable crops grown in Brazil. The products and seeds market, as well new tends of vegetable consumption are discussed, such as minimally processed, organic products, frozen and superfrozen, canned and conserves, dehydrated and lyophilized vegetables.
