ORGANIC ACIDS AND SUGARS FROM FIRST AND SECOND CROP FIG JUICES

Abstract:
Fig juice from high yielding cultivars such as Colar, Florancha, Tío Antonio and Gobernador was analysed to determine sugar and organic acid contents.
The analysed sugars were fructose, glucose, sacarose and maltose. The main sugar found was glucose followed by fructose; sacarose and maltose concentrations were in all cases lower than 1%.
The main organic acids were oxalic, citric, malic, tartaric, ascorbic, fumaric and acetic. Data collected from first crop juice showed that oxalic and citric were the main acids whereas second crop juice showed high concentrations of malic and tartaric ones.
