SENSORY CHARACTERISTIC OF CUCUMBER FRUITS (CUCUMIS SATIVUS L.) WITH THAUMATIN GENE

Abstract:

    The aim of the experiment was to compare the sensory traits of cucumber fruits of cultivar Borszczagowski and of a transgenic cucumber line with thaumatin gene.
   The sensory analysis concerned attributes as: exterior appearance of the fruits, flesh colour, flesh firmness, fresh smell of the fruit, flesh juiciness, taste (sweet, bitter, off-taste) and overall assessment.
   The fruits of the transgenic line were characterised by a sweeter taste, a higher firmness of flesh and a higher overall quality, as well as a less bitter taste and less off-taste.
