Abstract:
The most important of the Ribes cultivars grown in the United Kingdom is the black currant and the most important Rubus is the raspberry.
Approximately 65 per cent of the black currant crop and 90 per cent of the raspberry crop are processed.
The other Ribes cultivars like gooseberry and red and white currants and Rubus cultivars like the loganberry and blackberry are also largely used in processing.

Black Currants are used principally for juice extraction and jam manufacture but also for canning, yoghourt and freezing.
Raspberries go mainly into preserves with lesser quantities being used for yoghourt flavours, canning and freezing.
The needs of the fresh fruit market for both fruits plays an important but minor role in any fruit testing.
