Abstract:
In addition to the primary metabolites proteins, carbohydrates, and lipids, asparagus contains a large number of chemical constituents including flavanoids, amino acid derivatives, sulfur-containing acids, vitamins and saponins.
Recent studies have indicated that some of these compounds possess health protective and pharmacological properties.
We have initiated studies to examine saponins, &alfa-tocopherol, and rutin in asparagus.
The results confirmed that asparagus is a good source of these compounds.
However, significant variations in their levels among different genotypes were observed.
More studies are required to confirm the health benefits of these compounds.
