EFFECT OF IRRIGATION STRATEGIES APPLIED ON OLIVE TREE (OLEA EUROPAEA L.) ON OIL PIGMENT CONTENT AND COLOUR

Abstract:
This study evaluated the effect of regulated deficit irrigation and linear irrigation strategies applied to olive tree (Arbequina cv) on chlorophyll and carotenoid content of virgin olive oils. Colour was evaluated through the chromatic ordinates L*, a*, b* of the CIELAB colorimetric system. The results indicate that oils of regulated deficit irrigation did not show differences in pigment content and colour parameters. However the more severe treatments in lineal irrigation experience showed an important effect on pigment content and colour of oils. So, chlorophyll and carotenoid concentration decreased when irrigation water applied to olive tree increased and b* value decreased similarly.
