QUALITY OF RASPBERRY JAM OF INDIVIDUAL CULTIVARS AFTER ONE YEAR OF STORAGE

Abstract:
The study carried out at the Agricultural University of Norway focuses on colour stability and other quality properties of jam produced from 15 individual red raspberry genotypes which had been stored for one year at 4°C and 18°C in darkness. Cultivar suitability for jam production was evaluated by the use of a sensory panel consisting of eight judges. In addition, colour measurements in juice/water mixture were performed at 515 and 410 nm. The scores for total impression indicate that 'Balder', 'NLH 415-21', 'Glen Isla', 'Malling Joy', 'BC 74-11-41' and 'Veten' were the best cultivars for jam production without using additional colourants. On the other hand, 'Glen Moy', 'Meeker', 'Malling Leo' and 'Malling Orion' gave the poorest results. It is suggested that new cultivars with similar colour properties as the last mentioned cultivars cannot be recommended for jam production. The colour scores showed the strongest correlation to the total impression scores. The colour, expressed as scores, colour intensity (measured at 515 nm) or colour quality (absorption at 515 nm / absorption at 410 nm), all seem to be good parameters for evaluating the cultivars suitability for jam production. Although there is a similar tendency in the figures for fresh juice and juice from jam, it seems difficult to use fresh juice figures for evaluating the cultivars suitability for jam production, because it is difficult to know where the limit of acceptance will be.
