PROCESSING QUALITY OF DECAPLOID STRAWBERRY LINES DERIVED FROM FRAGARIA X ANANASSA AND DIPLOID WILD SPECIES

Abstract:
Mature fruits of decaploid strawberry lines, derived from interspecific hybrids between octoploid cultivars and diploid wild species, were processed to jam by the vacuum kneading method, and the fragrance, color, texture and taste of the jam were evaluated by sensory testing. The typical fragrance of the decaploid lines had been maintained after processing although it was not so strong as fresh fruits. Fragrance of the jam made from decaploid fruits was quite specific and different from those made from processing varieties, and they were expressed as woody, herbal or grassy. The colors of the jam reflected the flesh colors. Texture and taste was almost same as the control samples made from processing varieties. The decaploid lines were crossed with cultivars, and the lines bearing large normal fruits with superior texture and fruit size for both fresh consumption and processing along with the typical fragrance were selected. In addition, aroma components were analysed by HSS-GCMS, and RAPD markers linked to typical fragrance traits were screened in the backcrossed progenies.
