Abstract:
A mathematical model for simulation of simultaneous heat and mass transport in air-drying of prunes is presented.
The differential equations of heat and mass transfer for a spherical body were numerically solved using a variable-grid finite difference method applying simultaneous heat and mass balances in each node.
This provides predictions of moisture content, temperature and dimensional change in a space-time domain during the drying process.
A computer-based dehydration system was designed and built to obtain quality kinetics data for prune drying and were used to test the results of the proposed model.
This paper presents the development and validation of the model and its relevance to interpreting the mechanisms involved in the drying process of prunes.
