MONITORING BRAND HOMOGENEITY OF TOMATO FLAVOUR

Abstract:
An instrumental model for the measurement of tomato fruit flavour was used to monitor the flavour homogeneity of the tomato brand ‘Gartenaroma’. Data from 20 holdings were gathered monthly. Differences between individual growers could be established. Through the combination of the variety grown and the cropping blueprint used, flavour was maintained during the whole cropping season on a stable and comparatively high level. Analysis of climatic and nutritional data showed that the best flavour was produced by farms that initially control vegetative plant growth, maintain a relatively higher concentration of sodium, grow at higher temperatures and maintain a greater plant distance.
